Oatmeal Millet Sandwich Loaf

Kids will love this bread, and so will you! It’s soft and light, while nourishing. Whole oats, along with their fiber, provide the only food source of avenanthramides, a unique group of antioxidants believed to protect against heart disease.

Millet is a complete protein, and the ancient grain sorghum has magnesium, copper, selenium, and a good dose of plant-based protein, B vitamins and dietary fiber. Sorghum flour is also surprisingly high in antioxidants, including phenolic compounds, tannins and anthocyanin, which help reduce inflammation and oxidative stress. Get off gluten and get on these nourishing grains.

Shepherd’s Protein Bread

This delicious gluten free sourdough loaf has a tender bite and a nice soft crust, holds up great as a sandwich bread, and boasts the nutty flavors of millet and quinoa, each a complete protein. Olives can be added. This bread can also be made to order as individual rolls covered in sesame seeds.

This is a sourdough bread, meaning the wild yeasts in the sourdough starter partially break down or ‘digest’ the bread’s grains and seeds, so you can more easily gain their nourishment, and those with a weaker digestion can benefit as well.

Mighty Breakfast Rolls

Perfect for a breakfast- or lunch sandwich, these are light and hearty. What a great combination! These are a lot like the breakfast rolls found in Scandinavia, but they’re even better — gluten free, sourdough, and organic! Read about sorghum flour above in Oatmeal Millet loaf description, or look it up for yourself. These are some powerful foods! Because sourdough, AKA levain, baked goods are more easily digested and quite delicious, we’ll focus on having plenty of these.

Famous Danish Sourdough

“Not-Rye”

Our travels in Denmark taught us to love this traditional ‘rye’-style seeded bread, but none of the ones we saw there were gluten free, nor did they have nearly as many seeds as these do. This delicious, soft, and hearty bread fills you up with seeds and buckwheat for your day’s work and play. It holds together in a sandwich and tastes great right off the cutting board. The buckwheat in this bread has protein, fiber, potassium, phosphorus, magnesium and calcium. Flax seeds are rich with Omega-3 and -6 fatty acids. Go team!

Cinnamon Rolls

These gluten free cinnamon rolls will roll you in decadent, guilt-free bliss! They are rich with flavor and texture, sweet-but-not-too-sweet, amazing warmed or room temp. Get a whole tray for your brunch party or just a couple for a breakfast treat.

You choose: butter or coconut oil; nuts or no nuts; glazed with monk fruit sugar, or powdered coconut sugar*, or powdered cane sugar*, or not glazed.

Ingredients: Rice flour*, potato starch or tapioca starch*, coconut oil* or butter*, coconut milk*, filtered water, coconut sugar*, active dry yeast, eggs*, cinnamon*, rice flour*, vanilla extract (vanilla beans*, water, sugar*, 100% sugar cane alcohol* (35-45%), apple cider vinegar*, salt.

For sweeteners, I use coconut crystal sugar for a little less than half what a recipe calls for, and then I’m using erythritol/monk sugar for (a little less than) the other half of the called-for sweetener.

Chocolate Chip Cookies

Sweet and tender, vanilla-and-chocolatey, these are a yummy treat. I’ll bake them up in different combos of coconut oil or butter, Kirkland chocolate chips or dairy-free chocolate chips, nuts or no nuts. Let me know if you have a preference!

Sheba’s Lentil Stew

Accompanying Diane’s baked goods will be Sheba’s delicious, nutrient dense, bone-broth based lentil soup-stew. It’s thick. It’s low-sodium. It’s three or four meals in a jar. It’s got “at least five vegetables.” It’s got wakame seaweed harvested by our friend Julie in Mendocino. It’s mostly organic and all-gluten free.
